On Wed April 18th the Mississippi Market, on West 7th Street in St Paul hosted a demo and food tasting by Chef Cynthia Johnson. The whole foods class was devoted to the benefits and preparation of raw food. Chef Johnson was in her element as she spoke to a hungry group about the benefits of a raw food lifestyle. Johnson not only spoke but she prepared several delicious dishes of soup, salads and smoothies. The total must be told-this reporter was skeptical about raw food....After all, how good could it possibly taste? I was prepared for the worst but I was totally and pleasantly surprised. The smoothie had me embarrassingly asking for seconds, and soup had me making that awful when "spoon scrapes bow' when there ain't no mo'" sound. It’s embarrassing for a meat eater to sing the praises of "raw food"-but it was better than good-it was delightful. When a canivorus meat eater like myself begins to make the argument for raw food, then you know without a doubt it’s something you have to try. Litt magazine recommends that you give raw a try, for not only the exquisite and refreshing taste, but the long term benefits of the raw diet.
